Coconut Milk

Today I bring you another dairy free milk. This is perhaps my favourite dairy free milk and I make it (or we do), often here at home, (but we still vary our dairy free milks). Besides being very versatile, it gives a sweet touch to breakfasts, cakes, desserts and other recipes.

This recipe is also in my book “Cozinha 100% Vegetal e Saudável”.

There is also a creamy and concentrated coconut milk (usually sold in tin or small packages), it’s more used for recipes of main dishes or sides when we want to add a creamy touch to our recipe. This coconut milk that I bring to you, is different – It’s a coconut milk to drink plain or accompanied with cocoa powder, carob flour, or a touch of cinnamon. It’s a delight.

As I said in the previous article, making our dairy free milks is more and more practical and we know exactly what we are drinking. It’s also lighter than the purchase dairy free milks, and of course much healthier than a cow or goat’s milk.

I confess that I didn’t enjoy the coconut milk when I buy it. It was always strange, but this one that I prepare at home, is delicious and has even become one of my favourites. The Oat Milk is also one I often prepare.

What to do with coconut leftovers (okara)?

I usually freeze the leftovers of the coconut in a large bag and when I have a large amount, I put it in the oven to remove all excess water and then crush it to be in flour. (which I can use in various cakes and cookies)
Or you can follow the two recipes in my Portuguese cookbook “Cozinha 100% Vegetal e Saudável”, where I explain how we can use leftovers from dairy free milks to make biscuits. Which are delicious.

To prepare this recipe, we can use the grated coconut (simple), or the a fresh coconut. It works both ways and is equally tasty. As much as I like to buy fresh coconuts, I also do often with fresh coconut. But the grated coconut is of course much easy.

For anyone who has “ChufaMix” (a very quick dairy free milks maker) or something similar, you can prepare this drink in 2 minutes – the process is very similar. Put the coconut in the glass, and add 1L of hot water. Grind with the hand blend for 2 minutes. Slightly lift the dowel and wipe the coconut with the Chufamix stick and it is ready. You can use the food processor, and use the “ChufaMix” as a strainer.

Making our own dairy free milk, is as tasty as healthy. I still love making homemade dairy free milks.

Ingredientes
  • 100g
    Coconut, shredded or fresh
  • 1L
    Hot water

  1. In a food processor (or milk maker) place the coconut and hot water. Blend at full speed for 2 minutes.
  2. Use a nut milk bag or a thin cloth to strain the liquid. Doing some pressure with your hands.
  3. Store the milk in a tightly closed glass container.
  4. You can use it immediately or store in the fridge.

Nota
Store in refrigerator for up to 3 days.
