Homemade Soy Yogurt

There are already lots of plant based yoghurts in supermarkets, with or without sugar, however make our own yogurt at home is super easy and we get a delicious homemade yogurt, plus, we know exactly the ingredients we are using.

For a while I tried making homemade yogurts, but they never got the way I wanted them to, or they were too hard, or the taste was not the way I wanted it to. I’m not buying yogurts regularly, but when I do, I always opt for plant based yogurts. When I discovered this recipe, I found it easy and so tasty that I wanted to share it with you. To me this is the best homemade soy yogurt I’ve made until today.

With the base of this recipe, you can prepare 3 types of plant based yoghurt: solid yogurt, creamy yogurt (Greek type) and liquid yogurt. In the recipe below, you have the description of how to prepare these 3 yogurts. People used to ask me if it was possible to prepare liquid yoghurt at home. They’re practical to take to work or school, or even a picnic. So with this recipe, you can turn your solid yogurt, into a liquid yogurt or even a creamy yogurt (see the description of the recipe).

For how long you can store in the fridge?

Store in the fridge for about 5 to 7 days (if you use the lemon juice).

To prepare a flavored yogurt:

Mix in the yogurt (after it is prepared), fresh fruits, fruit puree, dried fruit, seeds, chocolate chips, coconut or other flavors at your taste.

Ingredientes
  • 1L
    Soy milk
  • 1
    Lemon, juice
  • 40g
    Corn starch
  • 125g
    Soy yogurt

  1. Place the soy milk and corn starch in a pot. Heat until you start to boil, but do not boil (~ 90º C), stirring constantly, for about 10 minutes.
  2. Remove from hot. Add lemon juice and soy yogurt. Stir vigorously for a few seconds.
  3. Sterilize the jars: boil separate water and pour into jars, leave for 3 to 5 minutes and remove the water.
  4. Pour the soy yogurt into the sterilized jars, close the lids and place in the yogurt maker for 6-8 hours.
  5. Remove from the yoghurt maker, allow them to cool slightly and refrigerate for a few hours or overnight.
If you do not have yogurt maker:
  1. Preheat the oven at 50º C for 10 minutes and turn off.
  2. Place the jars with the yogurt (without lids) in the oven off for at least 8 hours (without open the oven during the process).
  3. Or cover the jars (with a thick cloth and without the lids) while they are warm and leave at least 8 hours in a dark place.
  4. After the time has passed, remove it from the oven (or remove the thick cloth). Cover the jars and keep the yogurt in the fridge for a few hours or overnight.
To prepare
  1. Solid yogurt: stay solid after being in the fridge for a few hours or overnight.
  2. Creamy yogurt: gently stir the solid yogurt with a spoon.
  3. Liquid yogurt: stir energetically the solid yogurt, put in a bottle and add 50ml of based plan milk (soy, oats, coconut, …), mix well.
  1. Place in the thermomix cup the soy milk and corn starch, set 10 min | temp 90 ºC | speed 3
  2. Add lemon juice and soy yogurt, set 10 seg | speed 3
  3. Sterilize the jars: boil separate water and pour into jars, leave for 3 to 5 minutes and remove the water.
  4. Pour the soy yogurt into the sterilized jars, close the lids and place in the yogurt maker for 6-8 hours.
  5. Remove from the yoghurt maker, allow them to cool slightly and refrigerate for a few hours or overnight.
